Preparation method
Preheat the oven to 200 degrees Celsius.
Cut the pumpkin and sweet potato into small cubes and put them in a large mixing bowl. When you wash them well, it is not necessary to peel them.
Cut the red onion and garlic into pieces and also do this in the batter bowl.
Rinse the raisins and let them soak for a few minutes before adding them to the mixture.
Add the olive slices.
Add the 6 eggs, curd or skyr and spices (cinnamon, salt, paprika, chilli powder) and mix well.
Put everything in a greased baking tin and put in the oven for about 60 minutes. The last 10 minutes you can possibly raise the temperature depending on the color of the frittata.
Tips:
For this recipe, you only need half a pumpkin. You can make delicious pumpkin soup from the other half, serve them together as lunch.
You can use any oil to grease the baking tin. My preference was for coconut oil and that is why it is processed in the recipe. So another oil can also.
