If you ask a child what his or her favorite food is, you will always get one of the following answers: pizza, fries, or pancakes. And who does not like pancakes? Only you associate pancakes with unhealthy food often, while you do not have to! Replace the fatty and sugar-rich pancakes as you are used to by the recipe below, and then this meal will fit into your daily diet.
This can be perfectly eaten as lunch, pre-workout or post-workout, because of the proteins and carbohydrates.
Necessities
Fittings bowl
Baking pan
Ingredients
- 1 banana
- 1 egg
- 2 proteins
- 30 grams of oatmeal
- pinch of cinnamon
- 1 tbsp coconut oil
- 200 grams of low-fat french cottage cheese
- 28 grams of protein powder
- 50 milliliters unsweetened almond milk
- 100 grams of frozen raspberries
Preparation method
- For the pancake batter, finely chop the banana with a fork until smooth and mix in a bowl with the egg, the egg whites and the oatmeal. Add some cinnamon to taste (about half a teaspoon) and put it away for a while.
- Make the cream by mixing the curd with the protein powder and almond milk into a creamy whole. I recommend the taste chocolate for the protein powder, but of course it is your preference. Add a little more unsweetened almond milk if the whole remains too thick.
- The recipe is sufficient for 6 small pancakes (about 8 cm diameter). Heat a little coconut oil in a frying pan and divide 3 ladles of batter into the pan for 3 pancakes. Bake for 1 minute on both sides until golden brown. Pay attention! Turning over the pancakes has to be done with a little more patience than with normal pancakes, because the batter is more fragile than ‘normal’ batter. Place the pancakes on a plate and bake the rest of the batter in the same way.
- Stack the pancakes in the following way: put a pancake on a plate, spread a large spoon of chocolate cream over it and finish with raspberries. Repeat until the pancakes are empty and you have a nice tower.
- The pancake tower is not only a party to look at, but also a party for your mouth!
Tips:
The pancakes are also very tasty with toppings. For example, choose cocoa nibs, mulberries, raisins, peanuts or other nuts.
Fancy more sweet? You can pour some agave or maple syrup over the pancakes.
